215/40/17 is a good sized tire for what you plan on doing.

215 on an 8 seems stretched. I have some on some ACS wheels and they are stretched more than I like for street use.

Nitto had some 225-40's correct? or are those gone too?

congrats on owning the only car that exists. consider this... the e30m3 looks hot, hot, hot with even the factory rims on ground controls. i wasted lots of money, all the way to h&r race springs, and nothing satisified until i went to coil overs, ground control. so... skip the rims for now, order ground control, with cut perches... thank me later. then, when you do upgrade your rims it will make all the difference. enjoy.
e30m3: the only car ever made. the winningest racecar ever.

I'm running 17" BMW Style 5's with 215's in the front and 235's in the rear and love it!

No. Not for clearance at least.
That set-up will work and clear everything.
The tires will be undersized though.

You may need spacers to clear your brakes. Check first. If you need them you can do just a 3mm spacer and be fine.
